I make turkey dinner (or ham) for pretty much every holiday but I also make it when it’s not a holiday so I can reap the benefits of the leftover turkey (the best part in my opinion)!! Leftover turkey is perfect for quick and easy meals and in particular, belly warming soups!

- Add acidic ingredients (such as canned tomatoes or lemon juice) after the beans have softened. (These ingredients can sometimes interfere with the rehydration process).
- Salt can also interfere with rehydration so it is best added after the beans have softened.
- Smoked turkey adds amazing flavor to this recipe.
- Add tomatoes with chilis for an extra kick if you like spice.
- Any type of smoked sausage works well. Frying your sausage before adding to the soup adds great flavor.
Both the dark and white leftover turkey meat cook to perfection in this recipe. If you don’t have sausage on hand, chopped ham or even crisp fried bacon are great alternatives to add a hint of smokiness.
15 Bean Soup (Slow Cooker)
HamBeens Cajun 15 Bean Soup can be found in the dry bean section of almost any grocery store (or you can order them online). Along with the beans, a seasoning packet is included in each package making it simple and perfectly seasoned every time!
This slow cooker turkey soup recipe comes out nice and thick & hearty, just the way we love it! If you prefer a thinner consistency, add one extra cup of broth or water to your Crock Pot.
While soaking the beans in this recipe definitely is not required, if you have already soaked your beans, you can reduce the liquid in the recipe by 1 cup.

Slow Cooker Turkey Soup (Cajun Bean)
Equipment
Ingredients
- 1 package HamBeens® Cajun 15 BEAN SOUP
- 1 green bell pepper diced
- 1 large onion diced
- 1 cup celery diced
- 2 cloves garlic chopped
- ½ pound smoked sausage sliced
- 2 cups leftover turkey diced
- 4 cups low sodium chicken broth
- 2 cups water
- 14 ½ ounces tomatoes diced
- salt & pepper to taste
- parsley for garnish optional
Instructions
- Rinse beans and remove any debris.
- Place beans, onion, pepper, celery, garlic, chicken broth, water, and turkey a 6 quart slow cooker.
- Cook on high 5-7 hours or until beans are tender.
- Add seasoning packet, sausage and tomatoes.
- Cook for an additional 30 minutes.
- Serve with cornbread.

Excellent! I added just a bit of rosemary & left out the potatoes ( didn’t have any). It was great. Balance of the stick with milk was perfect – not too creamy. Will make again!
Checked my grocery store and HamBeens website. The product is not available in my area. I can figure out the dried bean combo to make 20 ozs or so, but how much spice mixture would I need since I don’t have a way to measure what comes in the packet.. I am making my own spice mixture according to your ingredients list.. Thanks for a yummy sounding winter soup recipe.
The spice packed can be substituted with a bouillon cube or two in your favorite flavor. You can also get HamBeens on Amazon!
I haven’t made this yet but it looks AMAZING. Is it spicy hot, or mild? I like a little kick, but not too much. Perhaps I would add maybe 1/2 of the spice packet???? Thanks
I find it to be mild but you could certainly have a little taste of the seasoning before adding it.
I’ve been WAITING to make this soup all week and today’s the day, I’m excited.
The only thing is I want to add some Kale to it. Do you think that’s a good idea? And if so, at what point should I add it?

I love the 15 bean Cajun soup, however it is rarely available in my area. What spices can I add to the regular 15 bean soup to make it more “Cajun”. I bought a Cajun spice blend, but it does not quite do the trick. This is my go to soup for cold blustery days. Any help/ advice would be appreciated. Thanks.
We like to make our own homemade cajun blend, I find it has more flavor and less salt.
How much homemade Cajun blend do you add to the slow cooker turkey soup?
You can add about a teaspoon or so.
I accidentally put the tomatoes in at the beginning (with the beans, onion, garlic, broth, etc), will this still turn out ok?
Hopefully it works out ok for you Michelle. The addition of acidic ingredients too soon can sometimes keep the beans from softening.
This looks really good, but all I can find in my area is the 15 bean mix (no seasoning). What should I use to make up for the missing seasoning packet?
You can add bouillion in place of the seasoning packet.
This is excellent. A filling and hearty soup. Made according to recipe with the omission of the turkey and salt. I will be making this often.
One of my favorite things to eat! It is AMAZING!
Used 2 different kinds of beans I had on hand and 1Tbs of better than bouillon, yum! This is a keeper!
