If you ask me what my favorite refreshing summer cocktail was, my answer would be a fresh watermelon mojito!
Sweet juicy watermelon, tangy lime and garden fresh mint create the perfect blend for sipping on the deck! Whether you are entertaining family and friends or just spending an afternoon outdoors, you can’t pass up a pitcher (or three) of these refreshing adult beverages!

I am not quite ready for summer to be over yet. I know it’s coming but I’m going to squeeze every last little bit of summer I can before fall arrives. Nothing screams summer like a fresh watermelon mojito. They’re colorful, beautiful, and combine some of the best summer flavors out there.
We love to have friends and neighbors over for cocktails on the deck. I am kind of known in our neighborhood for having the best Classic Mojitos in town. Thankfully I have a garden that is overtaken by fresh mint… In fact, I make so many mojitos that I bought myself and electric lime juicer (best invention ever by the way)!!
We were having a bbq with friends and I was slicing up a watermelon and thought it would be delicious in our drinks. I was right! I like to drain the pulp from the blended watermelon but if you prefer you can leave it. Your drink won’t be as clear and it will be a little thicker but still delicious!
You can easily make this watermelon mojito recipe into a non alcoholic version if you’d prefer. Just omit the rum, and you have a kid friendly version of these patio party favorites. My daughter could sit down and finish a pitcher of the non alcoholic version!
How To Make A Watermelon Mojito
Watermelon mojitos aren’t difficult, and they are definitely worth it. Start by pureeing the watermelon in a blender. If you aren’t a fan of pulp, strain the watermelon through a strainer to remove some of it. I love it, so I usually skip this step.
Then, place the fresh mint in the bottom of the pitcher. Add a little bit of the watermelon juice. Muddle the mint using a muddler, or the back of a wooden spoon if you don’t have one handy. This helps to release the mint flavor from the leaves, resulting in a fresher tasting watermelon mojito!
Add in the remaining watermelon juice, simple syrup, lime juice, and rum. Fill the pitcher with ice, and then top it with soda. I like my mojitos on the dryer side, so I add a little less simple syrup. If you like your drinks sweeter, add a little more! Pour the watermelon mojitos into a highball glass, and garnish with additional watermelon, lime, and mint.
Enjoy your watermelon mojito on a patio, or somewhere involving sunshine!

Fresh Watermelon Mojitos
Ingredients
- 6 cups watermelon cubed
- 1 cup simple syrup
- 50 fresh mint leaves
- ¾ cup fresh lime juice approx. 5 limes
- 1 cup white rum
- soda
- ice
Instructions
- Blend watermelon in the blender until pureed. Strain to remove some of the pulp (optional). Measure out 2 cups of the strained watermelon juice.
- Place fresh mint in the bottom of a large pitcher. Add a little bit of the watermelon juice and muddle to release the flavors of the mint.
- Add remaining watermelon juice, fresh lime juice, ⅔ cup simple syrup, and rum. Fill the entire pitcher with ice. Top with soda.
- Adjust sweetness with additional simple syrup if desired. Garnish with additional lime, mint and watermelon slices.
- Serve immediately.

Hi Donna, we like to use a 2L or larger pitcher and adjust our ingredients accordingly. We top the jug with soda to taste. If you like a stronger taste be sure to add less soda. Enjoy!

Hi. I just read this recipe for watermelon mojitos and it says to add a little of watermelon juice and muddle to release flavor of mint. What does muddle mean? And what kind of soda?
Muddle means to “squish” the mint with a little bit of the juice to bring out the flavor. I use a muddler but you can also use the end of a wooden spoon. You’ll want an unflavored soda water or club soda.

We’re making up a pitcher of these for a party. Won’t the ice melt and water it down? Or is that the idea?
Yes the ice will melt in this recipe. The watermelon juice can be prepared ahead of time however I mix this just before serving.

This would be best made the day of. You could certainly blend the watermelon and create the watermelon juice the day before.
