This hot Reuben dip turns a classic sandwich into a creamy, cheesy dip with lots of melted Swiss cheese, tangy sauerkraut, and corned beef in a cream cheese base.

A Dippable Reuben
- Reuben dip is a perfect appetizer for parties, game day, or St. Patrick’s Day.
- It’s super easy to make. Just mix all the ingredients and bake in the oven.
- This dip has all the delicious flavors of a classic Reuben sandwich with corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing.
- You can easily customize the dip to your liking by adding extra ingredients like diced onions, chopped pickles, or even bacon bits.
- You can pair it with toasted rye bread (or pumpernickel), crackers, veggies, or pita chips. Or, let’s be real, just grab a spoon.
Ingredients for Reuben Dip
The Base – A mixture of cream cheese, sour cream, and Thousand Island (or Russian) dressing creates a creamy and tangy flavor. If you don’t have Thousand Island dressing, you can substitute mayonnaise and add a small amount of ketchup and relish.
Corned Beef – Deli-sliced corned beef is readily available. I always ask at the deli counter if they can slice it extra thick for this dip. Leftover corned beef be shredded or diced and used in place.
Sauerkraut – Sauerkraut is a tangy and sour fermented cabbage, and it can be found in almost any grocery store. Be sure to drain and squeeze well, so the dip isn’t runny.
Cheese – Swiss cheese adds flavor, while mozzarella makes it creamy and balances out the flavors.
How to Make Reuben Dip
- Cream together the cream cheese, sour cream, and dressing with a mixer.
- Add remaining ingredients and stir (as per the recipe below).
- Spread into a baking dish, sprinkle with cheese, and bake.
Reuben Dip Tips
- Drain and squeeze the sauerkraut really well to keep the dip from getting runny.
- Use a hand mixer to make the cream cheese extra fluffy. This will make the dip easy to scoop without breaking your chips or dippers.
- Prepare this Reuben dip up to 24 hours in advance. If made ahead of time, it may need a little extra baking time.
- Serve it with bread, crackers, or rye chips. If you’ve got low-carb guests, serve with cucumbers, carrots, or celery sticks.
- Reuben dip can be kept warm in a small slow cooker or crockpot mini for serving.
- Store leftovers in the refrigerator for up to 5 days. Reheat in the microwave.

Reuben Dip
Ingredients
- 8 ounces cream cheese softened
- ½ cup sour cream
- ½ cup Russian dressing or thousand island dressing
- 1 ½ cups sauerkraut squeezed dry and chopped
- 1 ½ cups deli corned beef chopped (about 6 ounces)
- ½ cup swiss cheese shredded
- ½ cup mozzarella
- ½ teaspoon caraway seeds optional
Topping
- ½ cup mozzarella shredded
- 1 tablespoon fresh parsley
Instructions
- Preheat oven to 375°F.
- In a medium bowl, using a hand mixer, beat the cream cheese, sour cream, and dressing on medium speed until fluffy.
- Add the sauerkraut, corned beef, swiss cheese, mozzarella cheese, and caraway seeds if using.
- Spread into a 2 qt baking dish.
- Sprinkle cheese and parsley on top. Bake for 18-22 minutes or until cheese is melted and golden brown.

If done in the crock pot would I still need to use electric mixer on the cream cheese first? I am a Reuben fanatic! thanks for the recipe!
While it’s not required, I would suggest mixing the cream cheese with an electric mixer. It adds air to the dip making it a bit softer/fluffier. Let us know how it goes!
