What are Fingerling Potatoes?

Fingerling potatoes are a unique heirloom potato with a long, stubby, and cylindrical shape, almost like a finger. Although they’re small and have delicate skin, they aren’t the same as new potatoes. They do not need to be peeled, and once baked, they’re crisp on the bottom with a soft buttery texture inside.

  • They can be tossed with oil and the same seasonings you use on your usual roasted potatoes.
  • Bake fingerling potatoes at a high temperature so they can brown; they’re tender so they don’t take that long to cook.
  • These potatoes are less starchy than a typical baking potato and pair well with anything from a fancy roast lamb to a burger.

Potatoes – This recipe calls for smooth and delicate fingerling potatoes. If you can’t find them, use baby potatoes, new potatoes, or even Yukon gold cut into 1 ½” pieces.

Seasonings – Use what you have and what you love, almost anything goes! Rosemary, thyme, or chopped sage are all great in this recipe (dried or fresh). A sprinkle of fresh parsley before serving adds freshness and color.

Variations – Add some diced onion or extra herbs, or shake it up and add a carrot to the potatoes, or even Brussels.

How to Roast Fingerling Potatoes

  1. Cut potatoes in half lengthwise.
  2. Toss potatoes in a bowl with olive oil & spices.
  3. Place on a baking sheet & bake in the oven or air fryer (per recipe below).

Tips for Potato Perfection

Here are some tips to make the perfect potatoes:

  • They’ll cook best if the potatoes are the same size (the really small ones can be left whole, extra large ones can be quartered).
  • Line the pan with parchment paper for easy cleanup.
  • Don’t crowd the potatoes. With a little space, they come out deliciously extra crispy.
  • Use a hot oven (400°F) to get a nice browning on the potatoes.

Oven Baked Fingerling Potatoes

These roasted fingerling potatoes are the ultimate side dish. Perfectly seasoned & roasted on the outside, tender & fluffy on the inside!
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4

Ingredients  

  • 1 pound fingerling potatoes cut in half lengthwise
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ¼ teaspoon dried thyme leaves or 2 sprigs fresh thyme
  • 1 teaspoon pepper
  • 1 tablespoon parmesan cheese shredded

Instructions 

  • Preheat oven to 400°F.
  • In a large bowl, combine potatoes, oil, garlic, salt, pepper, and thyme. Toss until evenly coated.
  • Spread onto a baking sheet flat side down and bake for 15 minutes.
  • Remove from the oven and sprinkle parmesan cheese on top, return to the oven and cook for another 10-15 minutes or until potatoes are golden brown in color.

Notes

In the Air Fryer: Preheat the air fryer to 400°F. Cut the potatoes, coat with spices and oil. Place in the air fryer. Cook for 7 minutes. Sprinkle with parmesan and cook for another 8 minutes.

  1. Made this yesterday. We liked it very much. I combined the thyme with the oil, etc. The recipe doesn’t specify whether to add to the oil or sprinkle with the parmesan.4 stars

  2. Per the recipe you place the potatoes cut side down. When you remove the potatoes after 15 minutes do you flip them over before you sprinkle parmesan cheese on top? Flipping them isn’t mentioned but the pictures look like you do. LOVE YOUR RECIPES!!!

    1. So glad you’ve loved the recipes. You can flip them if you’d like but I don’t usually flip them. This makes the flat side nice and crispy.
