Ground beef stroganoff is one of those comforting meals that is quick and easy to make, plus it can feed your whole family with a shortlist of ingredients! How about a hearty meal of beef stroganoff in less than 25 minutes? Count me in, this is perfect for a busy weeknight!

This easy Ground beef stroganoff recipe is made from scratch with fresh ingredients (and without cream of mushroom soup). I love dishes that come together so quickly (like Cabbage and Noodles or 20 Minute Fajitas) and even more so when everyone at the table wants seconds!

Ingredients in Ground Beef Stroganoff

Lean ground beef is our choice in this recipe. It’s got a little bit of fat for flavor but not too much! If you choose another ground meat (such as chicken or turkey) you’ll need to add some extra seasonings and a bouillon cube for flavor.

Mushrooms stretch the meal a bit and add some earthy flavor. I prefer brown or cremini mushrooms for flavor but any mushrooms you have will work in this recipe!

The sauce in this recipe is super simple with just a few ingredients. Be sure you do not use low sodium beef broth or the recipe won’t have enough flavor. This is a beef stroganoff without mushroom soup but of course, you can add a can of condensed soup or up to 4 oz of cream cheese if you’d like.

Seasonings are simple with salt, pepper, onion and garlic. Add your favorites, we love fresh thyme and/or a pinch of poultry seasoning!

How to Make Ground Beef Stroganoff

You truly will not believe how crazy easy this is!  You’re literally just  minutes away from getting this beef stroganoff on the table!

  1. Brown beef, onions and garlic.
  2. Add mushrooms, sauce & seasonings.  Simmer a few minutes.
  3. Start your egg noodles cooking!
  4. Stir in sour cream and serve over egg noodles.

Beef Stroganoff Tips

Beef: This recipe can be slightly tweaked based on the ingredients you have on hand. Ground beef gives the best flavor but you can certainly substitute another type of ground meat such as ground turkey or pork.  If using something other than beef, you’ll likely want to add some extra beef bouillon for a richer flavor! I highly suggest using the condensed beef broth in a can (instead of the box) for the best flavor!

Mushrooms:  Of course, fresh mushrooms are best, use any combination of white, cremini, or portobello all with great results. In a pinch, you can use canned mushrooms as well.

Sauce:

  • Keep in mind that sour cream may curdle if it boils so the sauce is thickened and removed from the heat before it is added.
  • No sour cream? Greek yogurt is a good substitute (or if you just prefer it).
  • To Thicken Sauce: You can add a little bit of extra cornstarch slurry to reach desired consistency. Mix equal parts cornstarch and cold water and pour a little bit at a time while stirring the sauce.

Variations

We love this stroganoff exactly as written but if you’d like to spice it up a bit, add one of the following:

  • Stir in a teaspoon or so of dijon mustard
  • Add a sprig or two of fresh thyme (or 1/4 teaspoon of dried)
  • Add a couple of slices of chopped raw bacon along with the onion & beef
  • Add a small dash of smoked paprika and a dash of hot sauce

We typically serve this over egg noodles but it’s great over mashed potatoes, sweet potatoes, or even spooned into a roll sloppy joe style!  Add a side salad and a loaf of crusty bread (to sop up any sauce left on your plate) for a great meal in under 30 minutes!

Got Leftovers?

Refrigerate leftovers in a sealed container 3-4 days.

Freeze: If freezing this ground stroganoff, leave out the noodles or potatoes and freeze just the stroganoff itself.

Reheat: If frozen, defrost leftovers in the fridge overnight. Drain off any liquid that has separated from the sauce (the cornstarch can sometimes cause separation). Heat in the microwave or on the stovetop on low heat until warm.

Ground Beef Stroganoff (Hamburger)

This easy Ground Beef Stroganoff is quick and delicious, making it the perfect weeknight meal!
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4 servings

Ingredients  

  • 1 pound lean ground beef
  • 1 small onion diced
  • 1 clove garlic minced
  • ¾ pound fresh mushrooms sliced
  • 3 tablespoons flour
  • 2 cups beef broth *see note
  • 2 teaspoons Worcestershire sauce
  • salt & pepper to taste
  • ¾ cup sour cream
  • 2 tablespoons fresh parsley

Instructions 

  • Brown ground beef, onion and garlic (trying not to break it up too much) in a pan until no pink remains. Drain fat.
  • Add sliced mushrooms and cook 2-3 minutes. Stir in flour and cook 1 more minute.
  • Add broth, Worcestershire sauce, salt, & pepper and bring to a boil. Reduce heat and simmer on low 10 minutes. Cook egg noodles according to package directions.
  • Remove beef mixture from the heat, stir in sour cream and parsley.
  • Serve over egg noodles.

Notes

*Do not use low sodium beef broth. You can use boxed broth or condensed broth, canned condensed broth has more flavor.

  5. Delicious! I followed the recipe as written, the only changes I made was during the thickening process I used mccormick brown gravy mix to thicken. I didn’t have fresh mushrooms so I had to use the canned ones. I drop in about 2 teaspoons of cream cheese.
    This is a very easy, great recipe for a hearty dish for weekday quick meals or great crowd pleaser.

  6. I am an 87 yr old cook for myself and my son. I tried because of 10 min prep. Well it took me all afternoon. I am very slow. Everything went together well. Taste was awful. To the trash. I like Spend with Pennies as a rule. Everyone else seemed to like it. Not me. It looked awful but appearance improved with addition of sour cream. I am exhausted and disappointed.

  7. Might be one of the worst recipes I’ve ever made and trust me, I’m a really good cook. First of all, 90% ground beef tastes like dried out pebbles. The rest might have been okay with a much better grade of beef. We didn’t concern ourselves with refrigeration or freezing because we threw it out. I’ll stick to my beef stroganoff using filet of beef or sliced NY strip.2 stars

    1. …helps if you purchase good grass fed 70/30 beef straight from the Rancher; not dry pebbles at all – maybe get creative since you are a great cook and add some tasty fat such as coconut milk. Sounds like you used some old frozen for years conventional purchased beef.

  8. I found this recipe and then remembered that I had a printed version of this, but the recipe was doubled. I only made this once before and the sauce was very thin and the same thing again when I made this yesterday. I used corn starch, but could not get it to thicken. Would it be better to use less beef broth and then add more if it turns out too thick?
    I never knew that condensed beef broth existed until I read this version of your recipe! I went to the store to buy it just for this recipe. I’ll never go back to regular broth again it did make a big difference in the taste!

    1. I am so glad you enjoy this recipe Jer! I haven’t had this issue so I can’t say for sure, normally I would just thicken with cornstarch. If you are finding that’s not working you could try using slightly less broth (although the flavor might change slightly).

  9. Had burger thawed out, but is the mood for stroganoff so started searching for recipes. Found this one and thought it looked inviting. Didn’t have egg noodles, so substituted penne noodles.   10. Good old ground beef! I’m not sure if it is the cheapest per ounce or whatnot, but it sure can extend the furthest for a meal when awaiting that pay day. You know you’ve reached a certain level in cooking at home when the thoughts of using mince beef for stroganoff (or as a substitute to any kind of meal) naturally come to your mind. This meal happened to hit that spot right at the right moment.

    I was reminded a fair bit of a Salisbury steak. There was the same rich gravy, the unpretentious flavour palate and all-round vibe of the meal, plus the combination of mushroom and ground beef seems to match all-too-well. It was all made before any UberEats could wish to rock up to the front door.

    When the time calls – short on time, low on cash, maybe a bit of both – this will certainly be within the arsenal yet again. Quoting Scott Hall: One more, for the good guys!

  13. Made this now Jan. 21, 2023. I used 2 pounds ground venison and 4 tsp of beef base for the broth in 4 cups of water. Let others salt and pepper the serving they took and used bow tie noodles. Very good.5 stars

  15. Turned out way better than I thought it would. Didn’t have beef broth so used French Onion Soup & 2/3 cup of water instead. Put the sour cream n parsley on top after put noodles in a bowl with the stroganoff on top. Very good.5 stars

  16. very good. easy to make. especially because I already prepared the ground beef the night before. made homemade chili the 1st night and stroganoff the next. served with green beans.

    1. This was easy to make but I think I’d prefer half cream of mushroom and have sour cream. Felt like too much Worcestershire but I doubled the recipe. A little bland for me but a good start. Will experiment more.4 stars
