Made this last night. Love it! I used green enchilada sauce and added corn and nopales, (chopped cactus) instead of the bell peppers. YUM!!! Will definitely be making this again. Thanks so much!

I haven’t tried using this recipe to stuff shells so I can’t say for sure R, but I think a double recipe should be about perfect. If you try it I would love to hear how it turns out!

Longer than 1 month and the beans can start to get soft and over time there can be risk of bacterial growth in the brine.
