PEACHES: Fresh or frozen works here. Look for peaches canned in their own juice and pat them dry before dicing. Freeze the peach juice in ice cube trays for sweet tea!
VEGETABLES: Go for colorful bell peppers like red and green to complement the peach colors. Red onions are preferred since they are sweeter than yellow or white.
JALAPENOS: Remove and discard the seeds before mincing jalapenos. You might not need a whole jalapeno, so start with half and add more, if desired. Pickled jalapenos or pickled red onions offer a more subtle heat and are versatile in other recipes, too!
SEASONINGS: Lime juice and olive oil marries all the flavors together. Use chili powder and cilantro to taste. Parsley can be easily switched out for cilantro without altering the final results.

Peach Salsa
Ingredients
- 2 cups frozen or canned peaches thawed or drained and diced, or 2 medium peaches
- 2 tablespoons fresh lime juice
- 1 red bell pepper finely diced
- ¼ cup red onion minced
- 1 jalapeño seeded & minced
- 3 tablespoons cilantro chopped
- ½ tablespoon olive oil
- ¼ teaspoon chili powder
- ¼ teaspoon salt more to taste
Instructions
- Dice the peaches and add to a bowl. Toss with lime juice.
- Add bell pepper, onion, jalapeno, cilantro, olive oil, chili powder, and salt. Toss to combine and let rest 15 minutes before serving.
- Serve with tortilla chips or spoon over grilled chicken or fish.
Notes
To Peel Fresh Peaches:
1. Bring a medium saucepan of water to a boil. Prepare a bowl with ice water.
2. Cut a small “X” in the bottom of each peach and place in the boiling water for 30 seconds.
3. Transfer to the ice water to cool for 1 minute. The skin should easily peel off the peaches.
