My favorite way to add extra flavor as well as veggies is to saute chopped zucchini, onion and chopped kale and clove of sliced garlic.. I add veggies to 1/2 mashed avocado sprinkle with salt and dash of cummin. Toast dense bread (or brown in frying pan with olive oil and clove of garlic) spread mixture and top with over med. fried egg. My husband loves it!!
Your version sounds delicious Nancy!
I like sprinkling lemon pepper on mine!
My favorite topping is a dusting of Tajin, a Mexican spice blend of chili, salt and dehydrated lime juice.
