What to Season Chicken With

This chicken seasoning recipe combines dried ingredients, each with its own unique flavor, to create the perfect seasoning! Delicious on cooked turkey or oven baked chicken breasts or used in so many other ways!

  • Savory: basil, parsley, sage, rosemary, thyme
  • Fragrant: garlic powder, onion powder, dill weed
  • Piquant: paprika, pepper, cayenne, dried mustard powder

Mix all ingredients together in a bowl are directed in the recipe. Then pack the mixture in an airtight container. It will keep for up to 6 months, so we recommend making lots!

How to Season Chicken

It’s easy to make chicken when you have this seasoning on hand. Just sprinkle it liberally on the chicken before roasting, including the inside.

You can also use this as a rub for skinless chicken breasts or thighs.

  1. Mix equal parts of chicken seasoning and brown sugar.
  2. Rub on the chicken and allow to rest in the refrigerator for a minimum of one hour.

Once seasoned, cook using your desired cooking method!

How to Cook Seasoned Chicken

Seasoned chicken is best cooked by baking, roasting or grilled – especially on a beer can chicken! For safety, use a meat thermometer and check that the internal temperature registers 165°F.

Here are some tips to follow for juicy, tender results:

  • Roasted – Whole turkey or chicken should be roasted at 20 minutes per pound in a preheated 375°F oven. For best results, cover with foil for most of the cooking time. Then remove the foil and give it an extra 20 minutes cooking to crisp up the skin.
  • Baked – Seasoned and baked chicken legs can be brushed with olive oil before sprinkling with seasoning. Bake at 400°F for about 40 minutes. Boneless Baked Chicken Breasts need only 22-25 minutes.
  • GrilledGrilled boneless chicken breasts need 7-8 minutes per side while grilled bone in chicken takes 35-45 minutes.

Chicken Seasoning

This chicken seasoning and versatile and can be storied for up to 6 months. So make lots and use on anything from chicken to casseroles and stews!

Servings 15 tablespoons

Ingredients  

  • 2 tablespoons basil dried
  • 2 tablespoon rosemary crushed dried
  • 1 tablespoon garlic powder
  • 1 tablespoon dried thyme ground
  • 2 tablespoons paprika
  • 2 tablespoons dry mustard
  • 1 tablespoons onion powder
  • 1 tablespoon black pepper
  • 2 tablespoons parsley dried
  • teaspoon cayenne pepper
  • ½ tablespoon salt or to taste
  • 1 tablespoon dried dill optional
  • 1 teaspoon dried sage optional

Instructions 

  • Combine all ingredients in a small bowl and mix well.
  • Store in an airtight container for up to 6 months.
  • To use sprinkle over chicken before grilling, baking or frying.
  • To use as a rub, combine 2 tablespoons of chicken seasoning with 2 teaspoons brown sugar or to taste.

  1. Love love love this seasoning mix ! Used it on baked chicken thighs and everyone who had it remarked on how delicious it was. I have some left over and I’m making a boneless pork shoulder toast tonight ( will slow roast it in a low heat oven ) and I’m wondering if this rub would make a good coating for it? I was thinking of adding the brown sugar, some olive oil and a little Dijon to make a paste and cover the roast in it. Maybe done extra crushed garlic too.
    Do you think that will work with pork?

  2. This is the best seasoning for chicken that I made yet. Just shared it with my mother. I happened to have every ingredient on hand. Didn’t add the 2 optional ingredients, even though I had them also. Speaking of which, I love how simple the ingredients were. Don’t like when it calls for ingredients that I have to buy and will probably never use again. Was delicious on your Baked Chicken Thighs. I think I’ll make this rub for Xmas gifts this year.   5. My husband and I tried this on some chicken leg quarters that we baked in the oven. They turned out fantastic! I can’t wait to use it on chicken that we’re going to grill. Yum! I used all the seasonings on the list, even the optional ones. After mixing all the seasonings together, we ran them through the blender to make it all a little finer. Worked great!   6. Well balanced and tasty! I’m going to make some as Christmas gifts. I’ll make sure to gift myself as well!!!

    If anyone is daunted by the number of apices, don’t be. It is easy to throw together. 1 batch made a pint of flavoring for me. I added about 1/2 part brown sugar to 1 part seasonings and it was awesome! My son, who can be brutally honest about some of my concoctions said to keep using it! He mentioned it reminded him of barbecue without too gooeyness which is what I was going for. I did use all optional spices as well.

  7. I was craving something similar to Outback’s grilled chicken on the barbie, and your seasoning recipe totally gave me the flavors I was looking for! I left out the optional dill and sage and followed your instructions for making it a rub. Since I was cooking a smaller amount (1 breast, but you know how giant they are these days), I used 3 tsp seasoning to 1 tsp brown sugar and it was excellent (I think that’s the same ratio you recommended, but math isn’t my strong suit).
