Air Fryer Potato Wedges
Air Fryer Potato Wedges are a favorite and we love the rosemary parmesan combo on this version.
They come out fluffy inside with perfectly crispy skin on the outsides and lots of flavor! We love that they are quicker than oven baked wedges and extra crispy without the mess of deep frying.
They are a tasty quick and easy side dish to go with Oven Fried Chicken. Or serve them up next to Roast Beef French Dip Sandwiches.
Simple Ingredients
POTATOES Our preferred potatoes for Air Fryer wedges are russets or baking potatoes. They make nice long wedges, have thick skins and have a super fluffy interior. Truly, any kind of potato will work in this recipe. Sweet potatoes wedges are great too, I don’t find they come out quite as crispy as russets.
HERBS & SEASONING Fresh is best if you can get it but if not, use dried rosemary. Crush the rosemary slightly in your hand or with the bottom of flat glass before adding.
OIL We love olive oil, but it’s definitely fine to use another type of oil. It’s best with a light flavor such as vegetable oil.

How to Make Air Fryer Potato Wedges
Homemade Air Fryer Potato Wedges come together in no time at all. They can be cooked from frozen too, just add approximately 3-6 minutes to the recipe cook time.
- If using fresh potatoes, soak prepared wedges in cold water.
- Pat dry, then toss with oil and seasonings.
- Air fry wedges according to the recipe.
To air fry frozen or packaged potatoes, preheat the air fryer to 400°F. Place wedges in a single layer in the air fryer and cook 17-20 minutes shaking the basket after 10 minutes.
DRIED VS. FRESH HERBS: Dried herbs can be used in place of fresh in most recipes. If using dried in place of fresh, use 1/3 of the dried herbs for the amount fresh required. This recipe calls for 1 tablespoon fresh rosemary (which is 3 teaspoons) so you will need 1 teaspoon dried rosemary in place.
Tips for Crispy Potatoes
- Soak the potatoes in cold water. This removes starches from the exterior of the potatoes. (We do this with french fries too).
- Dry the potatoes very well before adding oil. If they have moisture, they will steam instead of “fry”.
- Do not overcrowd the air fryer. Cook in smaller batches in a single layer. Before serving, heat all batches in the air fryer for 2-3 minutes.

Rosemary Air Fryer Potato Wedges
Equipment
Ingredients
- 3 small russet potatoes with skin on
- 3 tablespoons olive oil or as needed
- 1 tablespoon fresh rosemary chopped, or 1 teaspoon dried rosemary crushed
- 1 teaspoon garlic powder
- 1 teaspoon fresh parsley
- ½ teaspoon seasoned salt
- 1 tablespoon fresh grated parmesan cheese for garnish
Instructions
- Preheat air fryer to 390°F.
- Scrub potatoes and cut into wedges (depending on size, about 8 wedges each).
- Soak potato wedges in cold water 20-30 minutes. Drain and very well and dab dry with a kitchen towel or paper towels.
- Toss potatoes with remaining ingredients until well coated.
- Place potatoes in the air fryer basket and cook 15 minutes. Toss and cook an additional 10- 12 minutes tossing every 5 minutes or so until crisp.
- Toss with parmesan cheese and additional salt if desired.
