Simple and tasty. I tossed them with some Herbs de Provence before roasting and skipped the herbed oil. Definitely will do again.

I tried this in the toaster over [for 1 person] and it works but takes about 20 minutes. This is a wonderful way to fix summer squash of any kind. easy and fun.

Add chopped hazelnuts and dollops of herbed goat cheese. Even better!
